The ingredients of the marateotic cuisine

Those of Maratea are poor dishes but with strong and sometimes delicate flavors, with a strong prevalence of everything related to pork, which for Lucania (see Lucanica) represents a true and proper cultural "humus".

Vegetables are often enjoyed as a first course, either on their own or accompanied by legumes or pasta: legumes, grains, vegetables, and aromatic herbs form the basis of dishes with a decisive yet harmonious flavor.

The pasta, handmade with only durum wheat flour, salt, and water, consists of fusilli, lagane, macaroni, strangolapreti, all accompanied by excellent meat ragù or with the aforementioned legumes or vegetables.

The sweets are made with simple ingredients, even if with bold combinations, such as the sanguinaccio prepared with pig's blood, cooked must, dark chocolate, raisins, lemon zest, cinnamon, and sugar, all contained in a pastry crust.

at table

As a condiment at the table, in place of the old "garum", the chili pepper is used to accompany almost all dishes of the Maratea tradition: despite its "character", it is still pleasant even for those who do not like food that is too flavorful.

The characteristic of the tables of the marateots are the scallions, a variety of wild onion with a particular taste, that are consumed alone or in combination with other dishes.

In a sort of ideal selection of a laid table with all the typical dishes of Maratea, we propose some specialties of the most genuine culinary tradition: recipes of dishes from the Maratea tradition, to try at home as well.
